Mediterranean Matcha - Quinoa Salad

Mediterranean Matcha Quinoa Salad
INGREDIENTS:

- 1/2 cup Quinoa
- One handful (~1/2 cup) of mixed Baby Spinach & Kale
- Half an avocado
- 1/2 cup baby/cherry tomatoes
- 1/2 cup cucumbers
- 1/4 cup walnuts
- 3-4 large figs
Dressing:
- 2 tbsp extra virgin Olive Oil
- 1 tbsp maple syrup
- 1 tbsp lime or lemon juice
- 1 tsp Matcha Powder
- 1 garlic clove
- pinch of salt & pepper
DIRECTIONS:
1. Cook the Quinoa in 1 cup of water for about 15mins.
2. Prepare the toppings by cutting everything into fine pieces and the Matcha dressing by mixing all the vet ingredients. Don't forget to add finely chopped garlic to the dressing.
3. Once everything is ready, all you need to do is plate it.
4. Place the mixed greens on the plate first, add the quinoa on top, all the veggies, fruits and nuts, and finally pour the dressing.
