Vegan Matcha Mini tarts


- 2 cups pitted dates
- 1 cup walnuts
- 1 cup granola cereal
- 5 tbsp maple syrup
- 1/3 shredded coconuts
- 1 tsp Matcha Powder
- 120g pre-soaked cashews
- 1/2 cup oatmilk (or almond milk)
(This recipe makes 12 mini tartes and you will need muffin tins)
1. Prepare the base by blending together the pitted dates, walnuts, 2 tbsp maple syrup and granola cereal in an electric blender. Once you get an even texture prepare your muffin tins and distribute the paste equally into 12 cups by using a spoon or your fingers.
2. Clean your blender and prepare the filling.
3. First, heat the oatmilk and pour it into your clean blender. Add 1 tsp of Matcha Powder and mix well. Then, add all the remaining ingredients to mix; shredded coconut, cashews and 3 tbsp maple syrup. (Leave some coconut flakes out for decoration)
4. Pour the filling on top of the base and place the muffin tins into the fridge for at least 30mins.
5. Once they rested and cooled you can start decorating by adding some nuts, fruits, or other decorative elements on top.
6. Voila! The best part; ENJOY!
